Trail Mix Cookies Recipe

  • 1/3 cup coconut oil, melted

  • ½ cup brown sugar

  • 2 tsp vanilla

  • 1 large egg

  • 2 large ripe bananas, mashed

  • 1 cup wholemeal flour

  • ¼ tsp salt

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1 ½ cups quick oats

  • 1 cup nuts, dried fruit, chocolate chips, chopped.


  1. Preheat oven to 175°C (350°F).

  2. Line a baking tray with parchment paper.

  3. In a mixing bowl, beat together the coconut oil, brown sugar, and vanilla.

  4. When creamy, add in the egg and vanilla.

  5. Beat well.

  6. Stir in the banana.

  7. In a separate bowl, combine the flour, salt, baking soda, and cinnamon.

  8. Slowly add the flour mixture to the wet ingredients and mix until combined.

  9. Stir in the oats and fruit/nut/chocolate mixture.

  10. Place dough in large spoonfuls on the baking sheet.

  11. Bake for 10-13 minutes, until edges are golden brown.

  12. Remove from oven, let cool. Store in an airtight container.
