1/3 cup coconut oil, melted
½ cup brown sugar
2 tsp vanilla
1 large egg
2 large ripe bananas, mashed
1 cup wholemeal flour
¼ tsp salt
1 tsp baking soda
1 tsp cinnamon
1 ½ cups quick oats
1 cup nuts, dried fruit, chocolate chips, chopped.
Preheat oven to 175°C (350°F).
Line a baking tray with parchment paper.
In a mixing bowl, beat together the coconut oil, brown sugar, and vanilla.
When creamy, add in the egg and vanilla.
Stir in the banana.
In a separate bowl, combine the flour, salt, baking soda, and cinnamon.
Slowly add the flour mixture to the wet ingredients and mix until combined.
Stir in the oats and fruit/nut/chocolate mixture.
Place dough in large spoonfuls on the baking sheet.
Bake for 10-13 minutes, until edges are golden brown.
Remove from oven, let cool. Store in an airtight container.
