1 ½ cups (200g) pitted dates (soaked in warm water and drained)
¼ cup (35g) almonds
¼ cup (35g) cashews
3 tbsp (45g) tahini
¼ cup (60g) quick oats
⅛ tsp each: ginger, cinnamon, nutmeg
¼ cup (30g) roasted sesame seeds
Soak dates in hot water for 5 minutes.
Place drained dates in a food processor.
Pulse until dates are broken up.
Add almonds, cashews, tahini, oats, and spices.
Blend until a thick, sticky dough forms.
Transfer dough to the refrigerator, and let set for 30 minutes.
Once the dough is cool, scoop into 16 balls, heaping tablespoons, or 25g each. With wet hands, roll into balls, compressing the batter together.
Roll balls in the sesame seeds in a shallow dish.
Again, with the palms of your hands gently press the seeds into the balls to stick.
Store refrigerated in an airtight container for 3-4 days.
