1 batch 8 Veg Tomato Sauce
1 medium head cauliflower, cut into florets
¼ cup milk
2 tbsp butter
Salt and pepper, to taste
½ cup shredded cheese
Make the 8 Veg Tomato Sauce, using less water or let cool to thicken.
Steam the cauliflower florets until extra tender, about 10-15 minutes.
While hot, transfer to a powerful blender (or a large pot if you have a hand blender), along with the milk, butter, salt, and pepper.
Blend until smooth and creamy.
Taste and season as needed.
Pour the sauce into a baking dish (or portion into individual size ramekins).
Top with the cauliflower mash.Bake at 350°F or 175°C for 20 minutes.
Remove from the oven and sprinkle with cheese.
Bake for 5 minutes until cheese is melted.
Remove from oven, let cool for 5-10 minutes before serving.
