Lentil Shepherd's Pie

  • 1 batch 8 Veg Tomato Sauce

  • 1 medium head cauliflower, cut into florets

  • ¼ cup milk

  • 2 tbsp butter

  • Salt and pepper, to taste

  • ½ cup shredded cheese


  1. Make the 8 Veg Tomato Sauce, using less water or let cool to thicken.

  2. Steam the cauliflower florets until extra tender, about 10-15 minutes.

  3. While hot, transfer to a powerful blender (or a large pot if you have a hand blender), along with the milk, butter, salt, and pepper.

  4. Blend until smooth and creamy.

  5. Taste and season as needed.

  6. Pour the sauce into a baking dish (or portion into individual size ramekins).

  7. Top with the cauliflower mash.Bake at 350°F or 175°C for 20 minutes.

  8. Remove from the oven and sprinkle with cheese.

  9. Bake for 5 minutes until cheese is melted.

  10. Remove from oven, let cool for 5-10 minutes before serving.
