1 cup rolled oats
1 can chickpeas, drained and rinsed
2 tbsp peanut butter
1 tbsp tahini
¼ cup honey
1 tsp vanilla extract
¼ tsp cinnamon
¼ tsp salt
½ cup dark chocolate chunks
Process oats in a food processor until a fine flour forms. Pour into a separate bowl and set aside.
Place chickpeas in the food processor. Add 2 tbsp water and blend until you achieve a smooth consistency. You may need to stop every 20-30 seconds to stir to ensure all chunks are blended.
Add the peanut butter, tahini, honey, vanilla, cinnamon, and salt. Blend until smooth and creamy, stirring when needed.
Add the oat flour and process until everything is combined. Stir in the chocolate chunks.Refrigerate for 30 minutes.
Roll into heaping tablespoon sized balls using the palms of your hands.Store refrigerated in an airtight container for up to 4 days.
Can also be frozen!
