Cauli Dippers Recipe

Ingredients

  • 1 medium head cauliflower, chopped into florets

  • ½ cup mozzarella cheese, shredded

  • ½ cup cheddar cheese, shredded

  • ¼ cup parmesan cheese, shredded

  • 1 large egg, beaten

  • 1 tsp oregano½ tsp garlic powder

  • Salt and pepper, to taste

  • ½ cup cheddar cheese, shredded


Instructions

  1. Preheat oven to 200°C (400°F).

  2. Line a baking tray with parchment paper.

  3. Place cauliflower in the bowl of a large food processor.

  4. Pulse until a rice-like texture is created.

  5. Transfer the “rice” into a microwave-safe bowl.

  6. Add 1 tbsp of water and cook for 8-10 minutes, until it has softened considerably.

  7. Pour the cooked cauliflower into a thin, clean dish towel, let it cool for a few minutes, and wring the liquid out by twisting and squeezing the towel around the “ball” of cauliflower, squeeze really well until the cauliflower is mostly dry.

  8. Transfer the cauliflower to a large bowl.

  9. Stir in the cheese, egg, and seasonings. Mix well.

  10. Flatten the dough on the baking tray.

  11. Press with your fingertips to about ¼” thick.

  12. Bake until golden, about 25 minutes.

  13. Sprinkle the remaining ½ cup cheddar cheese and bake until cheese is melted, about 5 minutes.

  14. Slice into 12 pieces and serve.
